Kid Friendly Carne Asada Cups Recipe! By Carrie Stevens, Owner of Centerfold Chefs

Most kids are picky eaters, and I don’t blame them. Their young tastebuds are sensitive! So, a good way to make healthy Mexican food appealing to the whole family is to make “cups” out of flour tortillas!

Using a large round cookie cutter (or the top of your martini shaker), to make circles. Spritz them with some canola oil, and press them into muffin tins to form a “cup” and bake at 350 degrees for 5 minutes.

Set out some home made pico de gallo, advacado, black beans, cream, cheese, and skirt steak….and let the kids fill their own cups, to their liking. Making cute meals, brings fun to the kitchen. Try this recipe:

1 lb Skirt Steak
1/8 cup chili powder (rub have the steak with it, leave half plain for the kids)
2 tbsp. canola oil
6 large flour tortillas
1 cup canned black beans, rinsed and drained
1/2 cup chopped red onion
1/4 cup chopped cilantro
1 advacado, cut into slices
lime wedges for garnish

Make a paste with the chili powder and oil, and rub onto meat. Grill your steak on a grill, (a George Forman works fine) or in a slightly oiled cast iron pan. about 3 minutes and each side. Slice and set out in a dish.

Remember, kids don’t like their food touching! Use one bowl fro the Mexican blend shredded cheese, another bowl for the light sour cheam, a plate for the advacados, a bowl for the black beans (heated), and a bowl a fresh pico de gallo (recipe below). And let them fill their own cups!
