Cherry Chocolate Chip Scones
Start your Valentine’s Day out right with a fun breakfast treat for your sweetheart. These scones come together quickly and are delicious right out of the oven or even the next day. Get kids involved too — they can help measure ingredients, stir and knead dough. Don’t care for chocolate chips and cherries? Swap in raisins, nuts, or anything else that will set your valentine’s heart aflame.
Makes 7 large or 14 small scones
2 1/2 cups all-purpose flour
1/2 cup plus 2 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
8 Tbsp. (1 stick) unsalted butter, cold, cut into 8 pieces
2/3 cup plus 2 Tbsp. heavy cream
1 large egg
1/2 tsp. vanilla extract
1/2 cup dried cherries
1/2 cup miniature semisweet chocolate chips
1. Preheat oven to 375°F. Line a large baking sheet with parchment.
2. In a large bowl, combine flour, 1/2 cup sugar, baking powder and salt; stir with a fork to mix. Using a pastry cutter (or your fingers), cut in chilled butter until mixture resembles coarse crumbs.
3. In a separate small bowl, whisk together 2/3 cup heavy cream, egg and vanilla. Pour into flour mixture and stir with a fork until dry ingredients are just moistened. Fold cherries and chocolate chips into flour mixture; do not overmix. Dough will seem dry.
