Baked Cod, Spaghetti Squash, and Green Beans Dinner

A Delicious Dinner of Baked Cod, Spaghetti Squash, and Green Beans!
Green Beans
1lb green beans
1 tsp earth balance
Salt and pepper to taste
Melt earth balance in a frying pan add green beans and sauté till you feel they are cooked (we like ours all-dente ) season with salt
Spaghetti Squash
Earth balance ( 3 – 4 tsps depending on size of squash)
1 – 2 cups water
1 handful per piece of currants
Turn oven to 350
Cut spaghetti squash length wise and scoop out seeds
Place squash in either a La Crusette  ( Dutch oven) or any kind of glass cooking dish place water and bottom and sprinkle cinnamon and smidgens of earth balance spread over the squash
Place on lid or tin foil and place in oven. Bake for about 30 – 45 min or till the squash breaks away
Take out squash cut into pieces place in serving dish place a handful of currants on each piece and serve
Baked Cod
4 – 6 oz per person
1 lemon
1 cup Ground pine nuts
1 cup quinoa flour
1 tsp per piece of fish of vegannaise
1 or two tsp of salt
1 or two tsp of pepper
Two tsp of garlic salt
1 tsp of oregano, rosemary and basil (basil is for dressing)
Preheat oven to 350
In a bowl place fish with the lemon juice and let soak with a sprinkle of salt and pepper
In a mixer blend pine nuts, quinoa flour and all seasonings until ground well
In another bowl place vegganaise with one tsp of basil
